Lucuma “Eggnog” Recipe

When I first saw this recipe at Sunfood Superfoods (affiliate link, as are the following links), I was ecstatic. I LOVE eggnog, but it’s not the healthiest choice I make all year. Here was an alternative using lucuma, which I bought at Sunfood recently, and I couldn’t wait to try it. I made a few adjustments to it, of course, based on what else I had in my kitchen, and that’s the recipe I’m sharing with you here. My own version, based on the one by Sunfood.

What You Should Know Before You Make It

Two things, in particular:

  1. It’s absolutely delicious.
  2. It tastes nothing like eggnog.

So, I really feel that calling it eggnog is misleading, because it gets you thinking you’re going to have something that tastes like eggnog but is better for you. Not the case, and it’s a disservice because this beverage is wonderful on its own merit. It doesn’t need to be an eggnog alternative. It can just be itself!

So let’s call it…

Wintry Coconut Lucuma Beverage

2 cups unsweetened coconut milk (if you use sweetened, take out the coconut palm sugar)
1/2 cup lucuma powder
1/2 teaspoon vanilla paste (you could use regular vanilla extract)
2 Tablespoons coconut palm sugar
1/4 teaspoon nutmeg
1 teaspoon chia seeds
Dash of pink salt

Ground the chia seeds into a powder. A coffee grinder works perfectly for this.

Pour all ingredients into a blender. Blend until smooth. Let it chill in the refrigerator for a few minutes, then sprinkle some nutmeg on top (mine all came out fast in one spot, as you can see in that picture 🙂 ) and enjoy!

There is a very slight grittiness to it, just so you know. It doesn’t bother me at all, but if you’re sensitive to textures you might appreciate the warning. 🙂

I will definitely be making this again. It doesn’t replace eggnog when what I want is eggnog, but it is an excellent treat.
